Summer Camp - COOK! Programs - Emeryville , CA

We believe that learning how to cook is an essential life-skill, one that has the potential to be exciting and rewarding; engaging for creative, scientific, wild, and orderly thinkers alike. We teach through hands-on, experiential classes, utilizing the rich culinary resources around us, and leaning always on our collective love for food and for feeding others.

JUNE

Week 1 - June 7-11 - Intro to the Kitchen! Register

Welcome to the Kitchen! There’s lots to learn and discover. This week we will meet your classmates, learn how to set up for class, organize the kitchen, read your recipes and properly clean your space. We will introduce you to our secret weapon, ‘Mise en place.’

Skills learned this week: Basic knife skills, what are all the different knives - how to hold and care for the knives. Baking, simple measurements - difference between liquid and dry measuring, and weighing. Learn the differences of sauté, pan-sear, shallow fry, and deep fry.

Week 2 - June 14-18 - World Wide Dumplings Register

This class will primarily focus on dumpling recipes from across Asia, though we would be remiss not to give a nod to some of the other world-wide dumplings (WWD, a new movement!) that have influenced our hearts, minds, and bellies. Overall, this class will be an exploration of fillings and wrappers, the techniques employed in wrapping, handling, and cooking them, and the sauces that accompany our beautiful, (sometimes) buoyant, “babies.”

Week 3 - June 21-25 - Asia on the Go! Register

Asian street foods! Let’s take a trip! In this class, campers will explore delicious street foods from all regions of Asia. We will discover foods from Thailand, Vietnam, India, Singapore, The Philippines, Koreas, Malaysia, Nepal, Laos, China, Japan.

Week 4 - June 28-July 2 - Baking I: Eggs, Butter, Sugar Register

Baking I & II may be taken separately or in series for a comprehensive overview of the art/science/craft. In Baking I we will be covering recipes, techniques, and chemical reactions based on eggs, butter, and sugar. Quick breads, muffins, simple cakes, cookies and crackers are just a few of the recipes that will be the base of what we cover in this class. Put on your precision-glasses, wipe the flour off your hands, grab your whisks, spatulas, scales, and mixers (figuratively, of course, we will provide these in class), and join us for a rich and satisfying week (or two!).

JULY

Week 5 - July 5-9 - Baking II: Yeast, Natural Leaven and Lamination Register

Baking I & II may be taken separately or in series for a comprehensive overview of the art/science/craft. In Baking II we will explore the delights of yeast and leavening, building on what we learned in Baking I. Croissants, Danish, yeasted breads, sourdough, pizza, focaccia and more await you in this continuation of the magical baking experience.

Week 6 - July 12-16 - Dinner and Plated Desserts Register

We love to eat not just with our faces but also our eyes! Who doesn’t love a beautifully crafted edible work of art on your plate? Campers will learn how to construct dinner and desserts inspired by molecular gastronomy and showcase the seasonality of California's bounty of fresh ingredients, mixing textures, flavors and techniques. Get your cameras ready!

Week 7 - July 19-23 - Improvisational Cooking Register

Inspired by the interests of our students and our own love for creating with wild abandon, the challenges will be set forth to help guide students and boost everyone’s ability to think creatively. Our improvisation classes are a perfect mix of autonomous creations, collaborations, and learning. Cooking each day will be guided by the Chef instructors, with parameters dictated by the availability of ingredients and a set of daily “rules”- for example, each small group will be challenged to create a three course meal from the ingredients on their table, OR, each individual must create an appetizer to contribute to a class-wide lunch buffet. We will have mystery baskets, free-for-all cooking, and recipe-altering challenges. Let’s go!

Week 8 - July 26-30 - Family-Style Meals Register

We LOVE family-style meals! Sitting with our nearest and dearest, sharing food, laughter and full bellies inspires comfort and connection. The campers learn how to make enough food to feed their people. Large platters and hot pots of deliciousness at the table brings to mind the spirit of sharing and what it means to break bread with our fellow humans. Lasagna, chili and cornbread with sautéed greens, chicken and dumplings, stir fry, spaghetti and meatballs with fresh baked Italian bread, crispy chicken cutlets with fresh salad greens and lemon, a taco feast with homemade tortillas!

AUGUST

Week 9 - August 2-6 - Vegetarian Meals and Cooking with Dairy Alternatives Register

Oftentimes people think vegetarian meals are composed of just the side dishes, but at Cook we show campers that plant-based foods can be the central part of your meals. We will emphasize foods like fruits, vegetables, and beans, and limit foods like meats, dairy, and eggs. There is a bounty just waiting in your garden or your local grocery store/ farmers market!
